So this year our family is one bigger with my adorable nephew Jack joining in on the fun. Abby was of course just a month old last year at this time, so in some ways it was a first for her also! I loved looking around the table with my parents at the heads, highchairs on the corners, and our entertainment in the middle. I also loved finally enjoying my latest baking obsession, springerle cookies. I have long wondered how hard it would be to make the beautiful cookies Martha made look so easy in her holiday magazines. Difficulty was low, timing however, proved a little more challenging. Half the ingredients need to sit out for several hours before the dough can be made. Once the cookies have been pressed, they have to dry for 24 hours before being baked. Then,the longest part of the process, waiting for the cookies to sit in tins for 3-4 weeks to get their maximum flavor and texture. I hope everyone thought they were worth the wait! I can't wait to try my Christmas molds!
